MARMELLATA alle ZUCCHINE
Ingredienti: 1kg zucchine piccole e sode, 2 limoni, 2 chiodi di garofano, zucchero
Lessare le zucchine intere in acqua bollente per 3 minuti, scolarle e tagliarle a rondelle, eliminando le estremità. Pesarle e metterle in una casseruola con la stessa quantità di zucchero, unire la scorza grattuggiata e il succo dei limoni, i ghiodi di garofano, mescolare e portare a bollore. Cuocere la marmellata a fuoco moderato per 40 minuti, mescolando di tanto in tanto. Con un frullatore ad immersione frullare il composto, e proseguire la cottura per 20 minuti, fino a quando si sarà addensata (fare la prova piattino!). Versare la marmellata ancora calda in vasi di vetro sterilizzati, chiudere ermeticamente e lasciare raffreddare completamente prima di riporre i vasi in dispensa. Consumare la marmellata dopo almeno 1 mese; perfetta con i formaggi!
