Con la grattuggia a fori grossi grattuggiare le patate e le zucchine, quindi trasferirle in una capace pentola. Rosolarle con 3 cucchiai d'olio per 5 minuti, unirvi 1lt d'acqua, salare e cuocere con il coperchio, per 10 minuti. Aggiungere il riso, riportare a bollore e cuocere per altri 12 minuti, sempre con il coperchio, mescolando di tanto in tanto. Spegnere il fuoco, insaporire con una presa di pepe e travasare la zuppa in una zuppiera, mescolarvi la menta, e lasciare riposare per 30 minuti, prima di portare la zuppa in tavola.
